Chicken Milan.


So, there are some recipes that I make that are better than others. Tonight was one of the best. It's one I've been making since we were overseas, and it remains a family favorite. We don't have it as often as we should (I seem to forget about it), but it is always so yummy!

Chicken Milan:

For the chicken:

1 lb chicken thighs, cut into strips
1/3 c flour
1/2 tsp each, basil and parsley
salt and pepper

Combine the flour, herbs, and salt and pepper in a large ziplock bag and shake to combine. I another bowl, combine the next 3 ingredients, whisk to combine.

Egg wash:
3 eggs
Milk (same amount as eggs)
Salt

Sauce:
4 tomatoes, seeded and chopped
½ onion, chopped
3 green onions, chopped
1 bag of frozen spinach, thawed and drained
Onion and garlic powders
Salt and pepper

Saute all above ingredients until tender. Serve on plate and top with chicken.

You can serve this alongside buttered noodles, or on top of fettuccine. Yummy!
